Responsibilities
Tasks: Clean meats to prepare for processing or cutting
Cut carcasses, sides and quarters
Cut, trim and prepare standard cuts of meat
Supervise other butchers, meat cutters and fishmongers
Shape, lace and tie roasts, other meats, poultry and seafood
