Head Baker Position (NOC:63202)
1 Permanent, full-time position.
Wage:
$23.00 per hour. 44 hrs work per week. 8-10 hours a day starting at 4:00 a.m.

Noctua Bakery. 3014 Dundas Street West, Toronto, Ontario M6P 1Z3
Job description:
• Prepare dough for pies, bread, rolls and sweet goods, batters for muffins, cookies, and cakes.
• Scaling, mixing, shaping, portioning, and baking of artisanal sourdough breads including buns, pizza & focaccia, and lamination of classical viennoiserie.
• Bake mixed doughs and batters.
• Ensure quality of products meets established standards.
• Draw up production schedule to determine type and quantity of goods to produce.
• Purchase baking supplies.
• Oversee sales and merchandising of baked goods.
• Train and supervise baking personnel and kitchen staff.
Job requirements:
• Completion of secondary school.
• 3 to 5 years of commercial baking experience.
• Artisanal baking experience and training in Mexican and South American specialty baked goods, savoury foods, and desserts.
Skills:
• Must be able to work within a team environment as well as independently (unsupervised) with a positive attitude and exceptional work ethic.
• This position requires finesse and accuracy in technical skills including scaling bread recipes, lamination, and experience with preparing fine custards and creams.
• The position requires heavy lifting (must be able to lift 50lbs bags), bend & twist, and stand for long periods of time.
